Bloody Mike's Spicy Mary

Bloody Mary
  • Old Bay Seasoning + Lemon Wedge (for Rimming the Glasses)
  • 3 Cups High-Quality Tomato Juice
  • 3/4 Teaspoon Dry Dill Weed
  • 3/4 Teaspoon White Pepper
  • 3/4 Teaspoon Celery Seed
  • 6 Grinds Smoked Salt (or 1/4 Teaspoon Sea Salt)12 Dashes Worcestershire Sauce
  • 3 Tablespoons Spicy Mike's Ketchup (Hot, Medium, or Mild)
  • 3 Ounces Elixir Juice (We used 1 ounce hot pickle brine, 1 ounce olive juice from blue cheese stuffed olives, and 1 ounce garlic pickle brine. Use 3 ounces total of whatever pickle or olive brine you have on hand.)
  • Juice from Half a Lemon
  • 4 Teaspoons Prepared Horseradish
  • 2 Ounces Beer per Serving (12 Ounces for All 6 Servings)
  • Garnishes (See Step 3 Directions)

Directions

  1. Sprinkle Old Bay seasoning on a plate. Rub glasses with lemon wedge and dip rim of glass into Old Bay seasoning to rim. Set aside.
  2. Make the Mix: In a quart size mason jar, add the remaining ingredients except for the beer and garnishes. Replace lid and shake.
  1. Assemble the Cocktail: Fill a shaker with ice and pour about 6 ounces of mix and 2 ounces of beer over the ice. Shake gently and pour unstrained into rimmed glass. Repeat with remaining cocktails. Garnish with celery, lemon wedge, and remaining garnishes of your choice. Serve immediately and enjoy!

Baked Eggs in a "Daham" Ham Cup

  • Nonstick Cooking Spray
  • 4 Slices of Thick Cut Bacon, Black Forest Ham, or Virginia Ham
  • 4 Large Eggs
  • Salt and Pepper (to Taste)
  • Fresh Basil, Scallions, or Parsley (Optional)
  • Spicy Mike's Ketchup (Hot, Medium, or Mild)

Baked Eggs

Directions

  1. Preheat the oven to 400 degrees F.
  2. Lightly coat 4 muffin cups with nonstick cooking spray.
  3. Fit 1 slice of ham into each muffin cup. (The ham will hang over the edges of the cups.)
  4. Crack 1 egg into each cup. Bake in the middle of oven until the whites are cooked but the yolks are still runny (approx. 13 minutes).
  1. Season eggs with salt and pepper. Remove cups carefully.
  2. Drop a dollop (or to taste) of Spicy Mike's Ketchup on your plate. Or, if you're feeling crazy, put it right in the center of the yolk.
  3. If you're sass-box and you've stopped caring what anyone else thinks, then sprinkle with chopped basil, scallions, or parsley.

Cheddar Burger w/ Balsamic Onion Awesomeness

Cheddar Burger

Onions:

  • 1 Pound Red Onions, Cut Crosswise into 1/2-Inch-Thick Rounds
  • Olive Oil
  • 3/4 Teaspoon Coarse Kosher Salt
  • 1 Teaspoon Coarsely Ground Black Pepper
  • 2 Tablespoons Balsamic Vinegar


Burgers:

  • 2 1/4 Pounds Ground Beef (15% to 20% Fat)
  • Coarse Kosher Salt
  • 6 Thick Slices Sharp Cheddar Cheese
  • 6 Large English Muffins or Hamburger Buns, Split, Cut Sides Grilled
  • 6 Tomato Slices (Optional)
  • 2 Cups Fresh Spinach Leaves
  • Ketchup
  • Spicy Mike's Ketchup (Hot, Medium, or Mild), to Taste

Directions for Onions

Prepare barbecue (medium-high heat): Arrange onion rounds on baking sheet. Brush with oil; sprinkle with 3/4 teaspoon coarse salt and pepper. Transfer onion rounds (intact) to grill; close cover. Cook until grill marks appear, about 4 minutes per side. Reduce heat or move onions to cooler part of grill. Close cover; cook until onions are tender, about 10 minutes. Transfer to medium bowl. Toss with vinegar.

Directions for Burgers

Shape beef into six 1/2-inch thick patties. Sprinkle patties on both sides with coarse salt and pepper. Prepare barbecue (medium-high heat). Place burgers on grill. Close cover; cook burgers until bottoms start to darken and juices rise to surface, about 3 minutes. Turn burgers; cook to desired doneness, about 3 minutes longer for medium-rare. Top with onions and cheese. Close cover; cook until cheese melts. Place muffin bottoms on plates; spread with Spicy Mike's Ketchup. Top with tomatoes, spinach, adobo chilies, and/or a fried egg and muffin tops.

Spicy Mike's Belt Buster Stuffed Peppers

  • 1 1/2 Cups Rice Pilaf
  • 2 Bell Peppers, Halved (Remove Seeds, Stems, and Veins)
  • 1/3 Pound Ground Sweet or Spicy Italian Sausage (Can Substitute Ground Turkey Sausage)
  • 1 Medium White Onion, Chopped
  • 2 Garlic Cloves, Chopped
  • 2 TBS Toasted Pine Nuts
  • 1/3 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Tomato Sauce
  • 1/2 Cup Spicy Mike's Ketchup (Hot, Medium, or Mild)
Stuffed Peppers


Directions

  1. Preheat oven to 400 degrees. Cook rice pilaf according to directions on box. Set aside. Boil bell peppers in 1 quart of water for 3 minutes, until soft. Drain and set aside.
  2. Cook sausage in large saute pan until no pink is seen. Add onions and garlic and saute until soft.
  3. Toast pine nuts in small saute pan for 2-3 minutes on medium heat. Set aside.
  1. Mix rice pilaf into sausage mixture, add tomato sauce, Spicy Mike's and pine nuts. Stir ingredients together.
  2. Fill each pepper with sausage/rice mixture and place into a casserole dish. Top with mozzarella cheese. Bake for 15 minutes until cheese is melted.

Mike's Mac & Cheese

  • 1 Pound of Elbow Macaroni
  • 3 Tablespoons of Butter
  • 3 Tablespoons of Flour
  • 2.5 Cups of Milk
  • Half Cup of Yellow Onion (Fine Diced)
  • Half Cup Diced Ham, Pancetta, or Bacon
  • 10 oz. Shredded Sharp Cheddar
  • 2 oz. Shredded Mozzarella
  • 2 oz. Shredded Fontina
  • 1 Cup Spicy Mike's Ketchup (Hot, Medium or Mild)
  • Garnish with a Sprig of Basil (Optional)
Mac and Cheese


Directions

  1. Preheat oven to 350 degrees F.
  2. Cook pasta in large pot of salted boiling water (al dente).
  3. In separate pot create a roux. Melt the butter, whisk in flour and keep it moving (about 5 minutes - make sure there are no lumps).
  4. Stir into the roux with the ham (pancetta or bacon) and milk.
  5. Saute onions in a separate pan until soft (about 5 min). Stir in ham (pancetta or bacon). Simmer (10 minutes).
  1. Stir in 3/4 of the cheese, gently pour in the Spicy Mike's.
  2. Drain pasta, then fold into the mix. Mix well, pour into a large casserole dish. Melt butter into saute pan and toss bread crumbs onto top of macaroni mixture to coat. pour melted butter evenly across the top
  3. Bake in oven for 30 minutes.
  4. Remove and let sit for 5 minutes prior to serving.
